Elopement in Santorini

I am planning an elopement (ceremony only- all legal aspects will be taken care of in the states). The elopement will happen in Santorini in May 2020. We hope to spend 3-4 days in Santorini surrounding the ceremony. It will only be the two of us, but we are hopping to stay somewhere with a moderate balcony with amazing views and make this the location of the ceremony. Only 4 people will be on the balcony, bride, groom, photographer and officiant. So this seems reasonable?

We will be traveling from the states in mid-May, we should be a baby bit jetlagged from the states, but otherwise ready to go. My itinerary is wide open. I have ordered the books suggested and will be reading soon. We are hoping for 18-21 days total: 4 in Santorini for wedding, etc. My list is very loose but currently I have: Naxos, Athens (very little time), Crete (haven't zoned in on the specifics). I am looking for any and all suggestions. We are laid back, not excited about night life. Our goals are the water and experience the greek life. TIA for your suggestions.

Crete- base in historic and beautiful Chania. Stay at Casa Delfino.
Naxos
Athens- why little time? We usually stay four nights.
Santorini- when we were there, a couple and their officiant were trying to have their wedding. The bartender had loud music blaring, mixer going until other guests of the hotel started screaming at him. So, make sure the hotel complies with your desire for privacy and no interruptions. Four nights in Santorini may be one night too long.
Consider adding Nafplion about two hours drive from Athens. Waterfront, historic old town. Castle on hill, castle on offshore island.

Congratulations on your nuptials this time next year! We’re planning a 2-week trip to Crete in September, but haven’t been there before. Your research will tell you what we’re learning - the north coast of Crete has more developed, bigger cities and towns, including at least one more resort-y, nightlife location., and sandier beaches. The south coast generally has smaller, less-visited and tourist-party-oriented towns, and a rougher, rockier coastline.

I was looking into something similar. Make sure the hotel you stay at is okay with the officiant and photographer coming to the room. Some can be strict about allowing those not staying at the hotel to enter. I am doing this route but ceremony will be in Naxos:

Santorini 2 nights (4 for you)
Naxos 4 nights - ferry to Heraklion,
Heraklion 1 night (maybe add one here) drive or bus to Chania,
Chania 4 nights - fly back to Athens,
Athens 2 nights (add one here)

There is some backtracking with ferries but if you want to do Santorini first, it may be unavoidable. You could fly to Naxos first to spend a few days getting over jet lag then head to Santorini for the wedding.
