Five of us have booked an Airbnb for 3 nights next May to Santorini. We are freely mobile and are wish to either rent a car of book tours while there. Are there local tour companies that can be booked ahead of time? (Instead of using the large tour companies), Should we rent a car. Is driving difficult on the steep terrain? Any other thoughts for older folks who prefer not to hike and scuba dive?

Use Google Maps and search for “tour in santorini”. You will get dozens of local agencies.
Is driving difficult on the steep terrain?
Santorini doesn't really have steep terrain compared to other islands.
The main issues when driving a car in Santorini are:
1/ other tourists who also rented a car (or an ATV)
2/ Parking in Fira, Oia, and other places of tourist interest
3/ Following GPS instructions instead of following direction signs
