We are arriving in Athens several days before our RS tour starts. We may want to use one of those days to take a day trip to an island that is close to Athens. Any suggestions on where to go for that day trip? Hydra is out since the RS tour goes there.

Aegina would be your best option. It's closer than Hydra and easy to get to. Many more options for things to do, see and experience than Hydra.
I like Aegina too. Plenty of ferries each day and only takes about an hour to get there. Temple of Apollo site and warm beaches within walking distance of the ferry. Plus the usual tavernas and shops and locally grown pistachios.
