I am thinking of getting the combination ticket. However, I can't seem to find out when it expires. I am thinking of using it the first few days in Athens and then use it again a week later when I am there for a few days before I leave.

I think it's supposed to last 3 days... but I have done what you mention several times, without a problem... maybe just lucky.

The Athens Combined Ticket is valid for five days, starting the day you purchase it (NOT when you first use the ticket).
