Hi,
I am traveling to Greece in August with my husband, Santorini a week and a day in Athens specifically, and was wondering where the best place for authentic souvenirs was in Greece? Any islands known for great shopping we could day trip to from santorini? I am looking for things like pottery, traditional clothing/jewelry, decor, possibly Turkish rugs, etc.

Santorini has everything on your list, maybe even the rugs. If you can't find them on Santorini you will certainly find them in the Plaka in Athens. Fira has the widest variety of shops, then Oia and Kamari. A daytrip to another island isn't advisable for souvenir shopping, and the timing of ferries won't give you much time anyway before you have to be back at the port for the return trip.
Starting on Page 201 of RS Greece Guide Book, there several pages devoted to shopping in Athens. I do not know about other towns that are covered by the book because that is as far as I have read so far. charlie
