Hi! First time going to Athens! We want an authentic, safe experience. Any recommendations on Bed & Breakfast places?

The term "Bed & Breakfast" does not really exist in Greece.
In Athens you will find hotels, hostels, Airbnb type rooms or apartments, and probably some rooms or apartments managed by agencies which offer breakfast.
As for authentic, I'm not sure what that means to you.
Athens is a very safe city, whatever the time.
Perhaps a little reading would help you see more clearly what you are looking for:

Unless you are staying more than 5 days in Athens, I don't see why you would go anywhere else. Athens has plenty to keep you busy for a while.

We actually will be there a little over a full week. I was listening to one of Rick’s podcasts and they said to get into some of the surrounding towns to be with the locals.

There are almost 4 million locals in Athens, if you don't you want to be with those, which locals do you want to be with?
RS didn't give you any place names?
And how would you like to get there? By car, bus, ferry, train?
