Hello - if I want to rent 2 ATVs in July on Paros, do I need to arrange that before hand, or is this something we can do the day of (just a day rental)

Although I think you'll easily find an ATV available given that there are quite a few ATV rental companies in Paros, in July it's still preferable to book in advance if you know your exact dates. Note that ATV is also called "Quad".
Some rental companies impose a minimum rental period (often at least 2 days) during peak season.

I would also make sure you have good travel health insurance with evacuation. Too many stories of people getting seriously hurt. I know you are a safe an conscientious driver, but it is all those other safe and conscientious drivers to watch out for.
Also, Greece is no longer as strict as it was about having an International Drivers Permit, but probably wise to have one for each driver.
