You do not say "plan my trip" but I'm guessing that this is what you hope for. And I fear that, if you're "starting from Scratch", anad providing the mimimum facts, you may not get the comprehensive volunteer services you seek. So many questions! -- for example, why Mt. Olympus? Because of all the mythology? It is far away from ATH or any other sites... and even farther from Islands. And does not have huge ruins or statues on top. Have you looked at maps and/or studied a guide book? Checked into car rental? (you will be at PEAK of high season). I thoughtfully suggest you do consider this a First Trip, and save Olympus till you have researched more.

Furthermore, needing to make domestic air, ferry and hotel bookings at this late date, you may have best results by turning to Athens-based travel agencies that have excellent reputation for working online with North American newcomers. These have the best up-close info on possibilities for late-planners. And importantly, if there's a "glitch" they're right on the spot, to make a phone call and solve problems. Two of such agencies recommended on forums like this are Fantasy Travel and Dolphin Hellas. Email them BOTH, the same request -- and give above info and MORE -- how many people, Island wish-list if you have one, and (importantly) lyour budget range per night for lodgings.
