we know we will be jet lagged but only have one night in athens before departing on a cruise. can we get a taxi to drive us around for a half hour to one hour just to see the lit monuments? is it safe enough?

Yes of course you can & yes, there will be taxis, whenever a ship is coming or going, if there is no immediate arrival/ departure there will still be taxis on the main road, or ask at your hotel/ terminal & they will order one.
The city of Athens is very vibrant until late at night. If you are in the Acropolis/Plaka/Monastiraki/Syntagma square area there will be many people around, restaurants & bars open etc. So you might enjoy a stroll around rather than limiting yourself to a taxi. Why not get a taxi to drop you off, wander down from the Acropolis, through Plaka & end up at Monastiraki where you can get a taxi back. These streets are safe, of course like any city you will want to be aware of your surroundings & of your valuables, but no more than any other city (& a lot less than some!)
