I have an early morning flight out of Heraklion, but I do not want to stay overnight in Heraklion. I would like to stay in Rethymno, but am worried it is too long of a drive to make an 8am flight. Is there a nice, scenic town between Rethymno and Heraklion to stay in for 3 nights? I will have a car and do not mind driving into Rethymno and surrounding areas to see sites. Please recommend towns/lodging for 2 adults who are looking for views/cafes/not too crowded. Thank you!

Have a look at Panormos which is a lovely village about 15/20 minutes east of Rethymno.

Also consider Archanes. It's not by the sea but it's a nice (large) village, good tavernas and excellent access to Knossos and Heraklion. At the foot of Mount Juktas ( https://en.wikipedia.org/wiki/Mount_Juktas ) which is well worth walking to for great views.

We stayed in Archanes and it was an easy trip to the airport. We really enjoyed staying there.
