8 days itinerary in Greece

Hi All,
We are planning the following for a 8-day trip to Greece (Mar 4 - Mar 11):
1. Friday (Mar 3) - Arrive in Athens
2. Sat/Sun (Mar 4/5) - Athens
3. Monday (Mar 6) - Fly to Santorini in morning, stay in Santorini
4. Tuesday (Mar 7) - Santorini
5. Wednesday (Mar 8) - Fly back to Athens in morning, rent car and drive to Galaxidi and stay here.
6. Thursday (Mar 9) - Drive to Delphi, see museum and ruins, stay in Meteora
7. Friday (Mar 10) - Meteora hike and sunset tour. Visit Great Meteoron Monastery
8. Saturday (Mar 11) - Visit Varlamm Monastery, drive back to Athens
9. Sunday (Mar 12) - Fly back in morning

Questions:
1. Is this itinerary fine or is there something we should improve. Overall the plan works better if we fly to Santorini at the end of the trip, but then we cant visit both Great Meteoron and Varlamm Monasteries.
2. We are staying in Galaxidi since we read that its a nice place to stay near Delphi. Are there any other suggestions? We are also looking for tips on what to see while driving to Galaxidi. We had planned to see Corinth during this time.
3. Any suggestions for places we should visit/eat/stay in these areas?
4. Is food easily available on Santorini. A lot of restaurants open in April and I am not sure how things are in March.

We did something like this last year in early October, but when we landed in Athens, we just kept flying and went on Crete for a few days, took the ferry to Santorini for a couple of days and then flew back to Athens and took the train up to Meteora.

In Santorini, we hiked the trail between Oia and Thira which was nice. We took the bus over to Parissa beach and spent the day there. Went to the 'Crazy Donkey' brewery and had lunch at Artemis Karamolegos winery.

In Meteora we stayed at Pyrgos Adrachti (which people on here had recommended) and hiked around the monasteries. No restaurant stood out to me while we were there. We just went to the ones that were walkable from the hotel.

It was all a great trip. However, I liked Crete better than Santorini just because there is so much history there. Santorini is beautiful to look at though and a good one-time thing to do.

On your way to Galaxidi during your stop in Corinth consider taking a hike along the west side of the canal. Its a good path and thee are lots of interesting things including what looks to me a Machine gun nest (abandoned) an abandoned railroad bridge over the canal and even further you will come to a small rocky place where you can see the groves in the rock where they used to drag boats across pre canal.

Further west you might want to stop at Ancient Corinth Roman Era and right next door drive way up on the mountain till you reach acrocorinth. Its a huge fortress with 360 degree views all around the countryside.

Continue west on the national highway and you will see sings for Ancient Nemia. Its only about 5km off the national road. Nemia had sister games to Olympia and the stadium is still there. As well about a kilometre away you can also find a small site with partially restored temple and a small museum.

Be sure to check for opening hours because the schedule will be on short winter hours.
