Will disembark cruise ship in Athens and would like to visit a relaxing less touristy island for several nights. Walk to beaches and restaurants. Suggestions?

Instead of an island, consider Glyfada, really an Athens suburb. Beaches, restaurants, shopping all available. Google it.
The nearest option would be Aegina, which is easily accessible from Piraeus. But it is only recommended outside school holidays. I would not stay in Aegina town, where the selection of hotels is limited, but in Agia Marina (5 times a day bus from Aegina). From there you can walk up to the famous Aphaia temple in just under a few hours, make a day trip to Aegina town (very lively, because boats are constantly arriving and leaving). From Aegina you can at least twice a day get by boat to the remote island of Angistri or further south to Methana or Poros - a very scenic boat tour along the eastern coast of the Peloponnese.
Agree with last poster about Aegina ... but carrie, Time of Visit is KEY. Best advice depends on knowing exactly WHEN -- iit even matters if you are talking midweek vs. weekend. Be specific please.

That's a Saturday, in warm weather, so you would have to book ahead for Aegina, since it's a "weekend getaway" for Athenians ... you might look at a place like this on Marathona beach -- cafe with sunbeds on the beach and a bulding next to it with apartments & "studios" -- https://www.aeginagreece.com/aegina-island/directory/aegina-listing/restaurants-cafes-bars/beach-bar/la-palma-marathonas/ It's got a great sunset view, a/c, family-owned & run. I suggest you book well in advance, as it's a good value.
Just to be clear, you are having a fantasy daydream when you ask for something convenient to Athens and also "less touristy." Just think about that for a moment, and you'll realize that's not a sensible request. Just relax & enjoy the beach.
