We're going to be traveling by car between Bolzano and Würzburg this January. Looking for a nice scenic town to spend the afternoon/overnight before driving the rest of the way. Maybe a place that has some tourist sights (churches, historic buildings, etc) Not interested in staying in Munich, Dachau, Dinkelsbühl, Nordlingen, Rothenburg or Füssen (already done that). Any place that you all recommend?
Viamichelin suggests the drive will take about 5 1/2 to 6 hours. Innsbruck, Nuremberg, and Bamberg all have great sights, Museums, Churches, etc. Depends what you want. quick google search produces these three sites immediately.

Ulm is about half way between the two and has a number of interesting sites. Google it and see what you think.
Get thru the Alps first in January with the weather. It will be dark at 17:00. If you take the eastern route towards Munich, you might consider a short detour to Reit im Winkl. There will be some ski, cross country ski, sledding etc. tourism, so probably a good thing to make overnight and dinner reservations. The town is know for Rosi Mittermaier an Alpine Skier who was the overall World Cup champion in 1976 and a double gold medalist at the 1976 Winter Olympics. https://www.reitimwinkl.de/ You will still have a good drive the next day.
Same eastern route, but a little farther along with a shot detour would be Eichstätt in the Altmühl River valley. It's know for Baroque architecture and Catholic Churches. https://www.eichstaett.de/
