We are spending five nights in Schleiden. We've plans to take the train into Cologne one day. Looking for suggestions of other sights in the area not to miss.

Will you have a car? That would influence recommendations.
I don't know the local rail network in the area at all, but popping into Aachen for a visit to the Dom and the old city shouldn't be to difficult. You're right next too Monschau and the Eifel National Park, but your ability to explore these would probably depend on having a set of wheels. The town of Stolberg is also worth a brief look-see, but I wouldn't bother without a car.
Likewise, Bad Neuenahr-Ahrweiler is a beautiful twin town in a valley surrounded by vineyards. The Ahrweiler section of town retains it's defensive wall and many old buildings.
