We are staying at the Premiere Classe Frankfurt Airport

We have an 8:50 am flight to Greece on RyanAir (Terminal 2) and are wondering what the best option for transportation would be. This is on a Saturday morning.

Looks like they don't have a shuttle, so taxi is the logical option. If you are traveling light, it is about a mile walk to the Niederrad S-Bahn station. If you want to make your flight, I'd stick with the taxi.
I would probably do a taxi. It isn't going to be that expensive, maybe 20€? Ask the hotel as they will know. The train is going to cost you almost 10€.
There is a tram going from your hotel to the S-bahn station. Use www.rmv.de to find the schedules or ask the front desk clerks. The S-8 and S-9 go from Niederrad to terminal 1, (2 stops) and then you need to take the Skytrain to terminal 2. The S-bahn is going to cost you 4.90€ each.
