We are departing Prague on 8th Oct for Munich, we have been advised that a short stop over in Nuremburg would be really worth while. Firstly is this option at all worthwhile, as I'm assuming we would have to catch an alternative train to the one we would have caught, were we going directly to Munich. Secondly I'm assuming this would add a significant amount to our travel time, and how long would we get to have a look around Nuremburg, if we were to choose this option. But still arrive in Munich at a reasonable hour.

Just go to Munich and do Nuremburg as a day trip. It is only an hour away two stops. That way you don't figure out what do with luggage although there maybe lockers at the train station.
I actually liked Nuremburg better than Munich.
You should not listen to advice on where to go and just do research, watch videos to find out what you know you are interested in or to verify that the person who gave you advice knows what your interests are.

Yes, Nuremburg would be a detour and different departure from the direct Prague-Munich trains that run about 3x/day, although it doesn't add more sitting-onboard time. Starting with a bus takes 5 hours while the direct train takes 6 hours. Prague-Nuremburg is served almost exclusively by DB-operated bus instead of train.

Yes, take the DB bus to Nuremberg, it is only 3 1/2 hours, has restroom, wifi, snacks for sale. It is the quickest way, and the cheapest at as low as 15 EUR per person when you buy up to 3 months in advance (nonrefundable). The 8:05 bus will get you to Nuermberg at 11:40 and give you all afternoon in Nuremberg.
You can get a Regio Nuremberg-Munich ticket for 26 EUR for 2 and take one of the Regional Express that take 1 3/4 hour to Munich. Or you can buy a full Bayern Ticket when you get to Nuremberg for 31 EUR for 2. That will give you free use of both the Nuremberg and Munich public transport network until 3 am the next morning, if you can stay up that late.
