What's the average amount of time it takes to get through security at SXF airport for a 630 am flight out? Do we go through customs on our way to Italy? Thank you

I can't answer the time question. But SXF (Berlin Schoenefeld - I had to look it up) to Italy is all within Schengen, so you will not go through immigration, and is all within the EU, so you won't go through customs. You will use your passport for your ID, but will not go through passport control.
