We are planning a trip next summer to northern Germany. We have traveled numerous times in other sections of the country but do have not experience along the North Sea and/or Baltic. We are particularly interested in information about Nordfriesisches, Sankt Peter-Ording, and/or Nordstrand. Are there some towns not be be missed? Any interesting hotel suggestions?

I can't really suggest any accomodations since the only time I stayed in a place that far north was at the HI hostel in Kiel. Towns that are worthy of your time as a day trip are Eutin/Holstein, all the more so if you're into classical music. The birthhouse/museum of Carl Maria von Weber, a contemporary of Beethoven, is located in Eutin.
I found Eutin interesting but didn't have time to get to the historic Schloss, where a WW I memorial is located. If you're deeply into history, go to Laboe, take the ferry from Kiel (which I saw in 2011), not far from the train station to get there. Even thought Kiel was plastered over and over in the war, the small towns in Schleswig-Holstein survived undamaged.
If you're going by train, the ICE train stop in Hamburg Hbf. From there you take the regional trains.

These are the highlights of Germany according to Baedeker, Germanys most popular travel guide. As you can see, there is much more to see on the Baltic coast (it's the second most popular holiday destination of Germany). I highly recommend to see at least Wismar, Stralsund, Lübeck, Schwerin and Rügen. I also prefer the resorts there, which are more beautiful and offer better beaches.
