We are traveling from Salzburg to Amsterdam by train this summer. We'd like to do at least one stopover (1-2 nights) in between maybe two. I'm looking for suggestions of good places to visit!

Frankfurt is the half way point to A'dam.
I would recommend 2 nights in nearby Mainz (short trip from Frankfurt.) Spend half a day there seeing the town's sights. Spend a second day doing a day trip to the Middle Rhine Valley (castle country) and include a river cruise.

Rheinfels Castle (St. Goar)
River cruise (start in Bingen, finish in St. Goar.)

From Mainz, take the train to Bingen (about 20 minutes) to board a cruise boat for St. Goar. Return from St. Goar to Mainz by train, stopping in the attractive old-world towns of Oberwesel and Bacharach on the way.
You can catch an Amsterdam-bound train in Mainz when it's time to leave.
