Suggestions for hotels/restaurants in Trier

My husband and I will be traveling by car along the Mosel this fall. Does anyone have any recommendations for places to stay and/or favorite restaurants? We want to take the hike to Burg Eltz and stay at least one night in Trier... Thanks, Cathy
