We will be traveling from Munich to Strasbourg and there are options that have a stop in Stuttgart. In looking at the layout of the station, it looks like the platforms are all next to each other, which would make changing trains a simple process. Is this accurate? Being new to train travel, I want to make sure I don’t cut us close on transfer time.

Note that the station is currently being rebuilt, but if you only need to go from one platform to another it should not affect you.
That is pretty much the fastest and most direct way, using ICE trains. No need to go up or down levels to get between tracks. You might want to be in the carriage closest to the lead engine, otherwise it can be a long walk to get to the head of the platform to make a change. Unless of course, the new track is directly across the platform. For the 8:27 and 12:27 departures from Munich, ICE to ICE, the connection is directly across the platform from Track 10 to Track 9. If you are connecting to a TGV, you won't be so lucky.
