Hi y’all! We are looking for some new-to-us Christmas markets within an hour or so (by train or car) that operate full season, not just one or two weekends. Looking for small towns like Dinkelsbühl with good local markets, NOT big ones like Nuremberg, Wurzburg, etc. Any suggestions?

Dinkelsbühl has a market that is completly un-touristy. It opens nov. 30; getting there from Rothenburg by public transport ca be a bit tricky (last return by bus 20:52), but it is doable.
Accessible by train (with a ransfer in Steinach) is Ansbach. The market opens on Nov. 30, too.
Nearer and easier accessible, but confined to dec. 1-3 is the private market on Schillingsfürst castle (organized by prince Hohenlohe-Schillingsfürst).
