Salzburg or Rothenburg?

We will have 2 days in Munich and I'm trying to decide between The Romantic Road to Rothenburg or The Salzburg Sightseeing tour. I'm also trying to decide if we should do one each day and not really see a lot in Munich or if we should just do one of the tours and spend the second day visiting Dachau and Nymphenburg Palace. Thoughts or suggestions?

Salzburg is a very scenic, historic, and interesting city and one can easily spend a day there. Rothenburg, on the other hand, is quite unique and I've been there a number of times. It's really comparing apples to oranges because they are so different. Perhaps some google searches for videos and looking at several for each place will give you some insights as to which will be of greater interest to you. If you've never been, then Dachau (or another camp) is something, in my opinion, that everyone should visit because of the place they hold in history. Just let your most important interests guide you and you'll not make a bad choice.

Thank you! I should have mentioned that we will be going to Berlin and seeing some of the history there. Would it be redundant if we did that and Dachau?

As a day trip from Munich, Salzburg is the better choice

Salzburg deserves more than one day, also if you go to Salzburg, you should do the Eagle's Nest at Berchtesgaden.
The Romantic Road has much more than Rothenburg. You need 2 days to do the road properly.

Dinkelsbühl is another medieval city like Rothenburg, with fewer tourists.
Augsburg is a city over 2000 years old with the oldest mini village for the poor.
Donauwurth and another great town.
Nördlingen, a walled city built in a meteor crater.
Fussen is at the southern end of the road.

The only place of interest you mentioned that is actually in Munich is Nymphenburg - which might require a couple of hours. Perhaps you shouldn't be spending 2 days (2 nights?) in Munich at all. How many nights do you have planned for Berlin? What about extra time there? If you feel the need to tour a concentration camp (something I would recommend only to Holocaust deniers) you can do an outing from Berlin to the Sachsenhausen camp. Rothenburg odT is a pretty walled town dedicated to tourism. And even with a car it's a longer trip (time wise) from Munich than Salzburg is. But with a car it is a nice drive, and there are plenty of places to stop along the way. The thing is though, if you stop, you probably won't see much of RodT. If you take the train you'll spend a large portion of the day getting to and from.

Salzburg is a much larger city, and is an active university and industrial city. The tourist section, around the old town and fortress, is easy enough to see in a day if you just run everywhere. And still you'll spend another 4 hours on the train going to and from.

You can't see everything in Munich in a week, let alone two days. And if I only had two days I wouldn't spend half of one at Dachau. And I wouldn't think of day tripping anywhere. If you want to see Salzburg, go there. If you want to see Rothenberg, go there. But basing yourself in Munich and then going to either is a waste of time. Especially if you only have two days.
