Decided to chop one day off a 5 night stay in Munich. Already scheduled to hit Salzburg before Munich and Nuremburg after. The Question: Should I add one day to Salzburg or add a day to Nuremburg?
Hard question to answer. I guess for me it would depend on how long I already plan for Salzburg and Nuremberg and why I'm going to them in the first place. If I'm going to Salzburg for the scenic surroundings and the historic sights, can I use another day to enjoy that more? If I'm going to Nuremberg for the WWII history, can I use another day to explore that more in depth? If I feel that I already have enough time in each for my main interest, maybe check to see what day trips or other nearby attractions may be of interest and not otherwise doable from Munich. I enjoy Munich a lot but I understand that others get bored with it after a couple of days. I can always find interesting places to go on day trips that allow me to come back to the same hotel (or apartment) rather than picking up and moving somewhere else.

Ther are historic sights in Nürnberg too, even more than in Salzburg and from a different epoche.
We're doing Nuremburg as a day trip while based out of Munich. The fast trains between Munich and Nuremburg run very often and take only a little more than an hour each way.
Summer I would do Salzburg and include Berchtesgaden and Konigsee (weather permitting) in the Alps. Winter Nürnberg in Mittelfranken with restaurants museums, breweries and side trips to other Bayern cities within an hour or so Regensberg, Würzberg etc.).
