We will be in Germany over Christmas. I am debating on which town to go to on December 23rd and December 26th. I know the markets close on the 23rd and there are limited things open on Dec 26th. If you had to choose, which town would you pick on which day and why?

My wife and I love Rothenberg, especially at night after the bus folks leave. But Bamberg has Rauchbeir which I really like. Rothenberg has Kathy Wolfahrt's, don't know if they have any events going on, but it has a wonderful Christmas Museum.
Between those two, Bamberg. RodT is very small, and will be crowded with much less open tha Bamberg. Bamberg has a very nice Christmas Market.
