For most of the city, I remember walking. Not sure how we got to the area that was formerly where the rallies took place.
Probably with tram #8 from main station. The cars have ground level access, and if you can board a cab, you can also board this streetcar. the same goes for the subway and most buses.
I just spent 4 nights there. It is true that Uber does not work there.
Everything is extremely walkable in Nuremberg. The two outlier sites are the Nazi Party Rally Grounds and the Nuremberg Trials Memorial. There are cabs available for those. Not sure where you're staying - we were right on a pedestrian street, but cabs could come up by our hotel on the side so there was no access problem.
We did walk to those - each took about 40 minutes of walking, though.
We had the Nuremberg card for our visit - it covers pretty much everything in the city and we had a great time just flashing the card and heading into whatever museum we walked by. There were some surprise hits for us in addition to the WWII sites - the science museum is excellent and the toy museum as well. We underestimated the time we needed for the German National Museum - set aside a bit of time for that one - it's excellent.
