Rhine towns

Hi.
This summer I will be going on my first river cruise on the Rhine (Basel to Amsterdam). As I'm putting together my itinerary, I have a few questions for some towns in Germany. We will be doing some tours with the cruise company, but we also want to do some exploring on our own. We have no mobility issues to accommodate for.
Here are my travel questions...
1. Restaurant recommendations in Rudesheim. We would like to have a nice dinner here, doesn't need to be fancy, just looking for a good spot. We will be here in the evening only. Any specific area of town good for wandering?
2. Koblenz - What locations do people enjoy in this city? Again, we'll be here in the evening and we're looking for some places/areas to stroll or restaurants for dinner.
3. Cologne - We would love to rent bikes for a few hours in the afternoon here. Does anyone know of a place that rents bikes? Are there specific areas that are especially fun for riding bikes? Parks with paths that allow bikes? I've heard that there are brauhauses here. Any recommendations for a lively brauhaus for dinner/beer?

Rudesheim is small, so the pretty much the whole town is fine for wandering.
