Rhine and Mosel River Day Cruises - Change of Plans

We're planning a trip to the burgenstrasse in last weekend of August, early September and we'd like to take a day cruise on the Rhine and Mosel rivers, though not on the same day. We'd also like to stay in Cochem for the wine festival the last weekend in August and hopefully start the river cruises from there. The cruise boat's website for the Mosel says that no boats run on Mondays but we're okay with spending the day in Cochem and just relaxing after our flight to Frankfurt and train ride to Cochem. We're looking for suggestions on the best plans, schedules, ideas, and routes and where to stay for the river cruises, to be taken in consecutive days before we head to Heidelberg on the following Wednesday. We won't have a car until we leave the Rhine valley on Wednesday. Thanks!

FWIW, the Mosel and Rhine cruises are very different. I noticed that during high season it's possible to coordinate the two rivers, via presumably Koblenz (?) But as Rick notes, more than one-way, downstream, on a limited portion of the Rhine is a waste of time. Look through old posts here if you don't have Rick's book.
