Regensburg home base—ideas for itinerary

Hello!
My husband is working in Graf for a week this summer and my 15 year old son and I are joining him. We are staying in Regensburg for 5 nights while he commutes to Graf. We plan to meet up in Regensburg each evening for dinner as a family.
I am trying to plan the itinerary for my son and I while hubby is working. My son and I love the outdoors and history.
We will visit Munich and G-P as a family, so we want to stay fairly close to Regensburg as I will not have a car.
Any opinions or suggestions on my proposed itinerary are welcome!
Day 1–get acquainted with Regensburg, walking tour
Day 2-boat ride to Walhalla
Day 3–train to Nuremberg for castle and city tour
Day 4- train/bus to Kelheim and ferry through Danube Gorge
Day 5-revisit Regensburg sights from Monday, leave early afternoon

Day 4 will be a 45 minutes train and bus ride

First by train to Saal an der Donau 25min then Bus to Kelheim Wördtplatz by Bus 20 min

Ferry through the Gorge to Weltenburg Monastery start from there 50 min up 30 min down stream

Having a full day you can go by ferry one way and hike back along and above the river Its a 1,5 hrs hike

I would take an early ferry cause Weltenburg can be crowded on some days
