Considering either doing a daytrip from Nuremburg or spending two nights in Regensburg. My follow on location is Munich. It’s only an hour or so from Nuremburg, but overnight would eliminate backtracking and save a little money? Thought it would be nice to see the City without so many tour buses. Thoughts?
So an overnight, full day and another overnight, then on to Munich that morning. I like Regensburg. The old city area of Regensburg has it's own feel. Around the city sites, history and Donau it is a University town with may café, bars and restaurants. Don't miss the Kollegiatstift unserer Lieben Frau zur alten Kapelle or the Brauereigaststätte Kneitinger (Brau House). Of course there is the Historische Wurstkuchl for Bratwürste with sweet mustard too. Checkout the high water marks there from Donau floods. Research the Battle of Ratisbon. Great town for Weihnachtsmarkt and Christkindlmarkt. Look into walking tours. Maybe stay at the Hotel-Restaurant Orphée.
There is not such a large amount of tour buses in Regensburg. What can happen, however, is that two or three cruise ships spit out their crowds, but that isn't the case every day either. Anyway, Regensburg is worth a whole day. However, you won't save on the train fare, at least not if you are using a cheap Bayern ticket, because you need one for every day. For the night I can recommend the Hotel am Peterstor - comfortable and cheap and not far from the train station. I second the recommendation of Kneitinger (reservation on evenings essential) but tend to consider the Wurstkuchl as the only real tourist trap in R. A bit more upscale is the historical Bischofshof (between the cathedral and the medieval bridge). If you like opera, there is a delightfull little opera house in neo baroque style.
Regensburg is one of our favorite cities and we tend to stay 2 nights. It claims to have a church for every day of the year. Several of them are very attractive. My wife really liked the city museum and the tour of the Thurn and Taxis palace. I best liked just walking about town and the green belt around the city.
I like the German Artist, Käthe Kollwitz, and much enjoyed portions of the Kunstforum Ostdeutsche Galerie - an art museum.

We are returning there this Spring ourselves.
I spent four days in Regensburg last time I was there, and I'd been there before. I had a nice room on the river (the place is now closed) and would walk into the old town in just a few minutes. I can't imagine trying to see the town in only a day. The streets right along the river are focused on fishing and shipping, with fish markets, chandlers, and other wharfside businesses most people rarely see. The Donaupark, the CityPark and Art Museum, the Golfing Museum (don't ask me why they have one), the churches, the Donau market, the shop full of fossils, the guy who makes custom knives, the old bookstore, looking at the areas rebuilt after the war; I have a lot of great memories from there.
