Hoping that someone can refresh my memory on the two places that are not visited on the Rick Steve’s tour in Munich, but are worth going to. If you have an extra day. One of the places mentioned was a small town that is beautiful idyllic and really captures the feeling of Bavaria. The other option was to go to one of the castles. Unfortunately, I can’t remember the small town that was referenced. If you have any suggestions or familiar with what I’m inquiring about, I’d love to know. Thank you for your time.

There are MANY such places. But IMHO it's not possible to capture "the feeling of Bavaria" by visiting just one of them.
Regensburg is very worthwhile - UNESCO World Heritage status, ofen called Germany's best-preserved medieval city. None of Rick's tours go there, sadly. If I were in Munich, that's the one that sticks out to me as most worthwhile and simplest to visit:

There are several Rick Steves tours which include Europe. Which one are you on? Rothenburg ob der Tauber is absent from at least one of those. Maybe that's what you're thinking of. It's a very small town, lots of cutesy buildings, way too many tourists and tour buses. Rick Steves seems to get a little weak in the knees over Rothenburg, but it would require most of a day to just to get there and back if you are based in Munich, as it lies well to the north.
The cutest of the villages in the Alps is Mittenwald, IMHO. It's closer than Rothenburg to Munich, not very close, but doable in a day.
I am on the Munich Vienna Salzburg tour that is 10 days. Tour starts on Sunday, May 10 and ends the following Sunday on May 17. I will be in Munich all day on Saturday and I’m looking for a great things to do that. May not be on that Tours. Appreciate any advice thank you very much.
I should mention that Mittenwald isn't just cute - there's a mountain lift there you can take for great views (the Karwendelbahn) and also a dramatic river gorge walk. Here's a good resource page for Mittenwald:

DIRECT trains from Munich go to Mittenwald in just under 2 hours... 8:28 - 10:23, for example. A day pass (Regioticket Werdenfels) will get you there and back cheaply. Buy it at the station from a machine or using the German Railways app on the day you travel.
Actually there are 2-3 river gorge walks... the Leutascher Geisterklamm is the one that's most popular.
We stayed in Mittenwald during a Germany/Austria trip. It’s a cute town, and besides the wonderful hiking, etc. the town has a deep history with violins. The violin museum was very nice for the historic & musical side.
While several regulars here always wax lyrical about Mittenwald (and certainly not without cause) I will do the same about Oberammergau. A small village famous for its Luftmalerei buildings and historic wood carving tradition, it can be reached by train in a little under 2 hours - roughly the same as to Mittenwald. It also has a cable car lift to the top of the Laber for lovely views of the Ammer valley. And the Kolbensattel has an alpine coaster that is a lot of fun.
We love Mittenwald. We'll be back in there for a week this fall. Short walk from train station to the main walking street. Great food. I really love the wild game dinners (Wildgerichte)
As for a day in Munich, lots of things to see and do. I'd really try to find out what the RS tour will visit before planning anything. Lots of museums (Deutsches Museum, Hunting & Fishing, Jewish Museum, Mercedes Benz, Weisse Rose). Lots of beer halls. Englischer Garten outdoor beer garden. Victualenmarkt. Lots of outdoor eating. Big churches all over. There might be something going on at the Theriesenweisse (that's where Oktoberfest happens), but there are lots of other events at other times. It's a wonderful town to wander around.
