I'll be driving into Munich from the south. Any recommendations for public parking to take the Old Munich walk on Rick Steve's app?
There is a garage around the corner from the Haubrauhaus and across the street from the Maximilian Hotel.
...But don't be surprised if both are filled, unless you arrive early. Parking is VERY scarce in the city center.
As a fall-back, try the garage by the Hauptbahnhof.

Won't the street signs point to nearest parking? Yes, they will. And there's usually even a digital display to indicate how many vacant spots remain. I have seen those signs indicate vacancies in the single digits for the entire Altstadt. Which means, the spots will be gone by the time you get to the garage.
The obvious question is: Do you really "need" a car or would the relaxation of train travel suffice for your travel needs?
I do not know where you are coming from. If it is from say Garmisch-Partenkirchen, it takes 1:19 by train and 1:05 by car but then you have to find and pay for parking. Even if you need a car for the rest of your trip, consider taking a train into Munich. Munich is not a car friendly city. There are several discount transportation tickets for the area.

Most of the public garages near the city center are on the west side so just aim for that area when approaching Munich. If you have a GPS just enter "Parkhaüser" and hopefully it will show you the locations (here is a list as well http://www.muenchen.de/verkehr/parkhaeuser.html). Most garages have some indication at the entrance if they are full or not like a red vs green light or even a sign stating how many available spots are left. You should have no problem finding one that is 15-20 min walking from Marienplatz. Expect to pay €2-€4 per hour.
Alternatively you could use a Park and Ride (P+R) location from outside the city center and take public transportation.
