My Wife has decided she would to use a private transfer ot get from the Frankfurt Airport to the Hyatt Regency in Mainz. Any suggestions of companies you have experienced.

This is very easy trip by train. Take commuter train S8 towards Wiesbaden and alight at Römisches Theater, €6.60 for a single ticket.
If she really want to travel by car she could just take a taxi.

I've used Blacklane in the past. But they have become more upscale... and pricier. I would look for a cheaper option.

Just take the next taxi from the stand.
And agree that S-Bahn is very fast, convenient and cheap.
