My husband and I will be in Berlin for 8 nights.
We want to go to Potsdam. My brother and sister-in-law will be there for 4 nights. Because of their short visit, they prefer not to go to Potsdam. We obviously want to spend time with them,but also want to go to Potsdam. So we are thinking about visiting Posdam two different time. Tue to see the Sanssouci Palace, and Wednesday to see the New Palace. Or should we try to see both palaces the same day? Thanks in advance.

I think that you can do both palaces on one day. But can does not mean that this meaningful for you. If you prefer two days just from stomach feeling I would do this, also to handle and enjoy all the impressions separately.

Maybe the Berlin WelcomeCard – Potsdam Edition makes sense for you?

It seems your plans for Potsdam are still flexible. Good.
Potsdam is definitely worth 2 leisurely days, seeing Neues Palais and Sans Soucci is only the beginning.
I would suggest taking the Havel river cruise, no need for advance tickets, not even sure such are available. It's a chance to see Potsdam from the Havel which flows through the city. Get the tickets at the cruise dep. point, ....serene and tranquil.
