I was hoping someone here could help me decide if I should rebook my flights. My family is going from Malta to Israel, but we make two stops in Germany. The first flight is from Malta to Frankfurt, and it arrives at 9:10 a.m. The next flight is from Frankfurt to Munich at 10:15. Our last flight to Tel Aviv is at 12 noon.
I am not so concerned with the Tel Aviv flight as the one from Frankfurt to Munich, is 1 hour and 5 minutes enough time to catch our flight? Putting this is the Germany section since those are where the flights I am concerned about are.

I have done a 1 hour connection in Frankfurt. Did it once, but will never try again.
The factors are gates vs a buss on the tarmac which is common in Frankfurt, security, and if your flight in is just a little bit late and how far back your seats are in the arrival flight, and how organized you are and how fast you are willing to walk/run and arrival gate and departure gate distances.
In my one experience my connection was about 15 minutes late or I don't know if we would have made it.
I just flew through there last week. Even though I was flying on the same airline, booked in advance, rushed to get to the gate, myself and seven others missed our connections. I was then put on a flight with yet another connection and had a wait of almost five hours. In the future, I won't be flying through with less than a 1.5 hour connection time.
I avoid Frankfurt when possible for this very reason of problematic transfers. It's the only airport in the world where I've ever missed connections that would've been easily made anywhere else. It really depends on your gates and carrier. If it's all Lufthansa then there is a good chance you'll make it but I would advise to check which gates your flight normally use and study a terminal map to help put your mind at ease.

I'm just really picky on the flights I book. I do minimum 2hour layovers no matter what the circumstance and then I rarely have to worry about it.

One important detail you failed to mention is the airlines you are flying. Are both flights on Lufthansa? Lufthansa and star-alliance airlines use Terminal 1. Most airlines other than Lufthansa or star-alliance airlines use Terminal 2, and I don't think you can make a connection from T1 to T2 in an hour.
The website, https://www.frankfurt-airport.com, will show you the flight numbers and gates (terminals). If you are using the same gate groups (concourses), you might be able to make it.
Actually I think you can fly through Budapest too. The problem with the discount airlines is they only do a route a few days a week. You have discovered the importance or at least benefit of planning trips with complementary locations.
All the flights are Lufthansa. I talked with a Lufthansa representative yesterday and they assured me I could make the flights and if we did not they would rebook us on another flight. Seems that if we rebook anything on our ticket they have to rebook all our flights, so it would be pretty expensive to make the change. Please say a prayer for us . . . . .
Changed planes in Amsterdam about 10 hours ago. From the time we landed till the time we cleared passport control in Amsterdam was 1:10. I mention this because a few times a year we change in each, Frankfurt and Amsterdam and Amsterdam use to be faster. Security seems to be up a bit.
Have you tried Turkish Air (I know that Houston is a hub for them)? I used it to fly to Malta and I'm pretty sure it you could use it to get to Tel Aviv (but with an Istanbul stopover). That would make for a one-stop flight. Their prices are very competitive and the service is top-notch.
