Greetings. My husband and I are traveling to Europe on our first trip. We are taking a two-week river cruise and then hope to spend three nights in Nuremberg. Any help with a place to stay and highlights of things to see would be appreciated.
Around the station there is a selection of chain hotels: NH, Holiday express, MotelOne, Maritim etc. Inside the walls: Hotel Drei Raben Königsstrasse, 30m from the station; Hotel Steichele (with great wine tavern), Knorrstr (near St. Jacob); Hotel Agneshof between main market and the castle; Dürerhotel just below of the castle - all approx €100 for a double room breakfast included. Sorat Hotel Saxx at the Main Market (prices varying, presently approx €110 excluding breakfast). If you specify your wishes we can provide better information.

The Ibis hotels in Nürnberg are inexpensive ($55-$65) in the summer if you get your breakfast elsewhere. The rooms are small but functional. The Altstadt Ibis is near the train station (Hauptbahnhof) inside the city walls. The Hauptbahnhof Ibis is about 2 blocks from the train station and just outside the wall. Both are very handy for visiting the town center.
I can not find the current price for breakfast but we quit taking them as the quality was falling. If you stay at either Ibis you can grab a quick breakfast at the train station; or, Der Beck Cafe is pretty nice and an easy walk from either.

Ok, then two other suggestions occur to me: Hotel Keiml and Hotel Probst, both in the Luitpoldstrasse, 200 meters from the station, just inside the walls. Look up the reviews on trip advisor to evaluate the pros (good value, great breakfast) and contras (no elevator, but they will help you with your luggage; sex and gaming shops in the neighbourhood, but really harmless). My personal preference is the Keiml (next to the recently opened Neue Museum), since the owner, Madam Keiml, a Lady in her eighties, is an outstanding nice and caring person.
We stayed in Hotel Probst last October and it was very nice. The reception I believe was on the third floor but it had an elevator. The people were very friendly and the room was simple, clean and nice. Breakfast was included with good food and our price was 125 Euros per night (breakfast included). The hotel was a 5 minute walk from the train station (very easy to get to). The public transportation was located by the train station also. We really loved Nuremberg and hopefully you will too. The center of town was another 10 minute walk with plenty of places to eat.

I second Hotel Keiml, but I am unclear as to whether that one of the ones you checked and found no availability. We stayed there on the back end of a river cruise ourselves, Budapest to Nuremburg. Nuremburg is a very underrated city to visit, I am sure you will have a great time. The German cultural museum is absolutely great. I could spend the better part of a day there. The Durer House was nice, and the Kaisersburg was great too, even though it's almost entirely rebuilt. Also the Documentation Center, which is a ways from the city center but easily reachable by tram, is outstanding. I like this city better than Munich, though Munich's art museums are very good (in particular the Alte Pinakotek). My wife and I visited Nuremburg in 2006 briefly on a day trip, and also on the river cruise trip in 2014. I am confident that you will find something reasonable.

We stayed at the Hotel Victoria in 2013 and found it to be our favorite hotel of our 2 week trip to Germany. Great breakfast, large room, super nice people.
We celebrated our anniversary while we were there and had dinner at Padelle d'Italia. One of the best meals we've had in Europe, husband still raves about the mushroom pasta 4 years later. It's a small place so we had the hotel call and make a reservation for us. Highly recommended!
We've stayed at the Burg Hotel near the market square; B&B style but kind of dated, although breakfasts are nice. For something more modern we stay at the Durer Hotel, just a bit further walk.

Don't underestimate how long it will take to visit the Germanisches Nationalmuseum. It took me three visits to see the entire collection.

Has anyone ever stayed atHotel garni Probst ?
I stayed at the Motel One and really liked it (my favorite chain of hotels in Europe). A nice walk into town and convenient to the street cars to get to the sites.
