Will be arriving at Nurnberg HBF on ICE Train from Frankfurt Airport and plan to take a local U Bahn subway train to a stop close to our Airbnb. Can someone explain the location of the U Bahn platforms in the station with respect to where ICE Trains arrive. Are the U Bahn platforms in a different building or below the ICE platform tracks?

From the platform follow the signs “Ausgang” (exit). In the station building, go to the central hall and follow the signs (the blue "U"'s on this map) to the subway, it is very easy and not far.

Nuremberg is pretty well signed, so as long as you know which route you want you'll be okay. The U and S bahn lines are on different levels, and it can be easy to get turned around, so make sure you know what direction the train is going in before you get on. It helps to know what the next few stops should be.
Nuremberg station is also usually very busy due to the shopping; you'll see what I mean when you get there.
