Just started researching things to see. Focus is on history and architecture. Below is my list so far. What else might I add?

The Nuremburg Palace of Justice where the Nuremberg Trials took place should be #1 on your list. Hitler’s Parade Grounds outside of town, #2. Then Rathaus, followed by Albert Durer house.

The Documentation Center is simply one of the best museums I have ever visited. I’m prettty well versed on WWII Germany, but I listened to every entry on the audio guide and was completely fascinated. To go to Nuremberg and skip it is crazy.

You might also want to check the calendar for the Messecentrum and see if they have a show going on while you are planning on being there. First, because that affects hotel availability and pricing, and second in case it's something you're interested in.

I assume you are traveling in Spring to Fall?
I like to walk from the Nuremberg Hauptmarkt to the Tiergärtnertor and have a beer or café there near the Albrecht-Dürer-Haus and Dürer-Hase Skulptur (sunny in the morning). Out the Tor (gate) there and around the back Mauer/wall of the Kaiserburg and enter from the northern side by the Hexenhäusle. I think this is an easier walk and more interesting way then straight up the Burgerstrassse. You get to see the fortress here. You can then walk down the Burgerstrassse into the Altstatdt.
You have to navigate your way from the Hauptmarkt to the Kettensteg and see the sights along the Pegnitz (Museum Bridge) etc. Along the Weißgerbergasse you can see the few Mittelalter buildings not destroyed in WII.
Check out the Biergarten Kopernikus at the Krakauer/Kasemattentor (east on the old wall).
For something local and different take the U-Bahn to the Schanzenbräu Schankwirtschaft Brauerei biergarten.

Thanks for the great feedback. Yes, plan to visit summer-fall timeframe. Will move the Palace of Justice and the Documentation Center higher up on my list.

Another vote for the Documentation Center and Rally Grounds. The information on how Hitler and his staff used propaganda was truly captivating.

Documentation Center... and we really liked the Handwerkerhof near the train station... the main restaurant there right in the front was really good too!

I made a day trip to Nuremberg by train from Munich and my first stop was the Dokumentationzentrum, explored the rally grounds after that and then into the old town for lunch at the Literatur Haus, went through the Handwerkerhof, walked all over the old town and toured the Albrecht Durer house. Last stop was the Spielzeugmuseum (Toy)--that was absolutely delightful, several levels of incredible old toys (I'm a collector so was thrilled to see all of it) and a separate play & activity area for little kids.
