I'm going to Munich in the beginning of January and would like to take a trip to the castle if it is possible. However, I've heard that the best views aren't possible in winter because Mary's Bridge is closed. Is it still worth it to go in winter?
It's a wonderful place! Of course the view from the bridge is certainly one of the iconic or postcard views. For me, that view was maybe the single best part of my visit.
But I haven't been there when the Bridge is closed. Whether it's "worth it" is, of course, for you to ultimately decide.
Hopefully someone has been there in winter and can give you their opinion of the experience sans the view from Marienbrücke.

If you want to see Neuschwanstein, you should, regardless of the time of year. Just seeing it, even if not from Mary's Bridge, will be worth it. Maybe even better if there's some snow. Don't miss the tour of Hohenschwangau, "next door", as it's where Ludwig spent his childhood.

Correct, access to Marienbrücke is blocked off in the winter months, but everything else is open. If you want to see the castle, go for it.
We were there after Christmas 2011. It was nice except we couldn't go to the bridge. Buses were not operating so we walked. The horse drawn wagons were operating.
I went to Neuschwanstein in January. There was no view at all because of snow and fog.
