We're driving from Munster to Hamburg Monday-Thursday... any ideas of great things to see on the way?
Which Munster do you mean? Munster in Lower Saxony or Münster/Muenster in Westphalia? You have 4 days total? Including or in addition to spending time on either end?

If you mean the town of Munster/Oertze, as pointed out above, which is closer to Hamburg than the city of Münster/Westfalen, I suggest the history museum, if you're into that., fascinating military history. If you have a good reading knowledge of German, even better.to read the maps and displays.
If it's Münster/Westfalen take the slightly longer route via Hannover. Between Münster and Hannover you can see
- Hamelin and Lemgo, two beautiful preserved towns.
- Bückeburg, the former capital of the principality of Schaumburg-Lippe, with a impressive castle and one of the most stunning Protestant churches of Germany
- Stadthagen, with a small preserved old town and the Mausoleum of Prince Ernst by Adriaen de Vries (Renaissance)
- Hämelschenburg castle, one of the most important buildings of the Weser Renaissance
- Hermannsdenkmal in the Teutoburg Forest
- Externsteine, a rock formation, and according to some sources the location of the Saxon Irminsul
The region between Hannover and Hamburg is less inetresting, but you could see
- Celle, a beautiful town full of half-timbered houses + a castle
- the Lüneburg Heath
