We're traveling from Munich to Cinque Terre and we have 1-2 days in between....it would be nice to break up the 12 hr train travel? Any suggestions of places along the way, that would be along a train route, to enjoy a day or 2? Even if it adds 1-2 hours to overall trip, it's OK.....

Verona is almost exactly half way, and a change of trains anyway.

i also like Verona, but if you haven't been to Venice, that would be my first choice. Looking at rome2rio.com site, it looks like you would add 1.5 hours on the way to Venice from Munich. But Venice to the Cinque Terre towns is actually 30 minutes less time than from Verona, so you're only adding an hour overall between those two choices. Be sure to stay on the islands in Venice vs. the mainland.

I'd also suggest Verona as it's "on the way" and won't add to your travel time. Venice is not a good choice as it will make the ongoing trip to the Cinque Terre longer. Another choice would be to stop in Milan for a night or two, which would make the trip to the C.T. even shorter.
