3 of us will be traveling to Munich, Salzburg, and Interlaken in October. I know its Oktoberfest and I know we can take a train from Munich to Salzburg, but how about getting to Interlaken. And where is the best place to fly in and out to LAX?

United, Lufthansa, and Swiss have nonstops LAX to Munich and Zurich to LAX. All the same code-share partners.
And Salzburg to Interlaken is Railjet train to Zurich, then a couple of Swiss trains get you to Interlaken, by the quick but long way, or the slow but short and scenic way.
Oktoberfest only ends in October; most of it is in the latter half of September. So, in 2017 it starts Saturday, September 16 and ends on Tuesday, October 3. Check your dates to see if you'll be there when it's on.
As for flights, you have to check all options. Munich gets nonstops from LAX; Salzburg gets no nonstops from North America. And Interlaken doesn't have an airport; the closest one is Zurich, which does have nonstop service from LAX. You can play around on Kayak or Skyscanner or Google Flights to see what works best for you. If you want to fly into one city and out of another (highly recommended), use the "multi city" or "multiple flights" option rather than looking for two one-way tickets.
I'll repeat the standard advice: don't stay in Interlaken, which is near but not in the Alps. Stay in one of the Berner Oberland villages, either in the valley (Lauternbrunnen) or up one side of the mountains (Wengen) or up the other side (Gimmelwald or Mürren).
