Hello! My friend and I are visiting Munich at the end of March 2025. I was hoping for a recommendation for an upscale restaurant to celebrate my birthday. Neither of us are beer drinkers.
We don't mind dressing up but don't know how to act around d people in tuxedo's. :)

I should add that we're staying at Platzl Hotel.
Take a look at the menu, but I enjoy the Zum Alten Markt. https://www.zumaltenmarkt.de/ I would not call it fancy, the interior is "old world" but the menu is "upscale German". Healthier, high quality ingredients, German classics with a modern twist, lots of seasonal selections.

Spatenhaus is upmarket without being oppressively so or too expensive, and has good food.

Not sure of your definition of upscale. There are 20 Michelin starred restaurants in Munich. Since many are French, Italian or Asian inspired, they will be focused on parings with wines rather than beers.
