We will be in Munich for one day in mid October. We will be arriving by train from Salzburg in the morning.
We were planning following three attractions.
Is this too much to fit into one day? In which order these have to be fit into?
I'd think it's possible as long as you aim for the 8am train from Salzburg, arriving in Munich at 9:41am.
Do the walk first.

U Bahn from Odeonsplatz to Giselastrasse for Englischer Garten.

Not necessarely - you may be able to get two RJ / EC Sparpreis tickets for €19 each - a difference of €7 against the Bayern Ticket.
I wouldn't assume on going to the English Garden in mid-October. It's a lovely park to visit in the summer if you have time to kill, but unless the weather is unseasonably warm, there's not much point going. This is what I'd do:
Arrive, do Munich RS walk. Have lunch at Andescher am Dom for great Bavarian food in a convenient location, tour the Residenz, then hit the Hofbrauhaus for some beer and to visit the upstairs beer hall.
