Munich itinerary advice

My elderly mother and I will be arriving at Munich on Friday afternoon (~ 2 pm) from Luzern and leaving for the states on Monday afternoon in early June. So we have two full days (Sat and Sun) to get around and my initial plan was to include a day trip to Neuschwanstein castle on Sunday. However, my mother said she would be more interested in Salzburg and I would like to change my plan accordingly (as long as my mother is happy, I am happy too). But my question to you, would it be better to visit Salzburg on Saturday instead of Sunday? I read some posts that Munich on Sunday can be very quiet but the same seems to be true for Salzburg. I also have to mention that my mother has some knee/back issues so our plans/activities have to be mild. My draft itinerary is below and I would very much appreciate any of your insightful advice. Thank you!

Friday PM: hotel check in and hang around garden/park in Munich
Saturday: Museums in Munich
Sunday: a day trip to Salzburg (can be on Saturday)
Monday AM: our flight is 4 pm (Munich airport) and we will stay at a hotel near the Munich station. So any activities in the morning?

Many restaurants and shops are closed in Munich on Sundays. But some museums have 1 EU entry fee.

I would suggest that you book your room(s) at the Eden Hotel Wolff.
It is directly across the street from the main RR station with tram, subway and bus stops right there.
They have an excellent, English-speaking staff who can give you all the information that you need.
The hotel restaurant is right in the building and so not only convenient, but great food and helpful staff as well.

Your Draft looks good. The only change I recommend is to stay near the Ostbahnhof as this area is nicer than the Hauptbahnhof area plus it’s more convenient for Salzburg and the Airport.

I like Motel One Ost but there are good hotels on Orleansplatz.

Thank you very much for the tips and advice. Maybe we will visit Salzburg on Saturday and go to museums in Munich on Sunday. Or do you think it makes better sense to stay on Sunday night at Salzburg and return to Munich on Monday as our flight is 4 pm? We have to travel with our luggage (Munich-Salzburg) if we do that way and I am not sure it's worth it. Thank you!

Salzburg is an easy day trip by train from the Ostbahnhof so with only three nights it’s not worth changing hotels. Saturday or Sunday would work for Salzburg, if it were me I’d check to see which day looked like the better weather and spend that in Salzburg.
