I'm planning a short notice trip for late November. I'd like to visit Bamberg and would like suggestions of what to see and how many days to allow. Also, any accommodation suggestions for solo traveler.

I've stayed at the Best Western Bamburg. Breakfast included, 8-minute walk from the train station, friendly and helpful front desk staff. It is around the corner from two interesting brewpubs with good food: Fässla, and Brauerei Spezial. I tried the famous smoked beer; good thing I requested a very small glass! :)
The Bamburger Dom is about a 16 minute walk from the hotel.
The Dom (cathedral) was the principal single sight for us. However, just walking the old town, seeing the town all from various viewpoints and viewing the town from St Michels (sp) was what we enjoyed best. It is a beautiful, very walkable old town.
We liked the Hotel am Dom near the cathedral in 2014.
The old town is one of the more scenic of the cities in the area, as others have said, just wandering can take up some time. If beer interests you, there are several fine smaller breweries, that was the focus of my trip. In the Kloster Michelsberg, which was mentioned for the views, there is also a brewing museum.
I agree with others, for me, just walking around the beautiful old town was the best part. And if you're a beer afficionado, try the local rauschbier....it's an acquired taste, but worth a try.
I agree, Dom and walk around the old town. It’s not the sort of town where you will have a lot of pressure to see specific sights. There is a paved trail along the river which is nice. This can be a refreshing break from goal-oriented tourism. Two nights (one full day) is plenty. We visited in 2014 as a day trip from Nuremberg and it was a nice stop.
