We'd like to take a side trip to Moers (my maiden name) when we are traveling from Cologne to Amsterdam. What would be the best way, a day trip from a main city? A stop over night on the way??

You could do this as a stopover from Cologne to Amsterdam. It is reached by a Regionalbahn from Duisburg Hbf, which is an intermediate station between Cologne and Amsterdam.

Click on the "stopover" button and add "Moers" and how long you want to stop.
Looks like a 6 hour stopover can be done, depart Cologne just after 10 am and get to A'dam around 8:30 pm.
You might want to check your luggage in a locker at Duisburg Hbf. Be sure to build in 30 minute connection time coming and going to do this. Click on the drop down menu at "Duration of Transfer". That will add at least an extra hour to the overall trip time. Looks like it can be done for 29 euro per person.
