Middle Rhine at Night?

Anyone have any suggestions on what to do at night along the middle rhine besides dinner? Is there any evening/night activities or tours ? Are shops still open into the evening? Im planning on going July 2020 and just trying to plan out little things like that ! Im planning on stayingin Koblenz if that helps but We're willing to go down the Rhine or Moselle if theres something cool ! Thanks

There's bars and stuff open around the Eck after dark. The river's pretty well lit, and you can walk around the banks.
