Market days along the Rhein

We will be travelling by car in early September from Bad Munstereifel, Germany to Paris, France (Sunday afternoon through Wednesday).

What would be your first few choices for stops? Do any towns have interesting market days during the first part of the week?

We've thought about driving from Koblenz down the Rhein to Strasbourg. Possibly Sunday night stay along Rhein before arriving in Strasbourg area for a stay on Monday and Tuesday night. Or should we spend more time along the Rhein and save Strasbourg for another trip?

The Upper Middle Rhine Valley (between Koblenz and Bingen) is a UNESCO World Heritage site and should not be missed. South of Bingen the Rhine flattens out and loses a certain amount of touristic steam. I think you'd find the terrain more interesting if you used the Mosel River Valley from Koblenz as a route into France (Metz) via Luxembourg. In Germany I'd want to stay over at least a night on both rivers if possible.
