Mainz dining

We'll be in Mainz for 4 days & nights, taking day trips up the Rhein via rail to various historical destinations.
Any recommendations for traditional German fare that is a good value in Mainz and points north, or cautions for restaurants to avoid?
Anyplace in Frankfurt that is a 'must dine', as we will be flying in & out of there?

We went to the outdoor market in Mainz on Saturday morning. Get there before 10:00 and find a seat with all the Germans drinking their beer and wine (yes, 10 am!) Walk around and find the food you like and bring it back to your seat. We had fish sandwiches, beer and cake. They have a huge market with all kinds of foods and fresh vegetables. We got there a bit after 10:00 and all the tables were full so we had to stand next to a high table. Looked like a lot of fun to get a seat with all the Germans, they were having quite a time!

Knowing your dates would be helpful. There are lots of festivals in the Rhein Main region in the spring, summer, and fall. Frankfurt has lots of Farmers Markets that are fun to eat at, mainly with wine though, not beer. Make sure to stroll through the Klein Markt Halle.

My favorite restaurants in Frankfurt for German food, especially for Frankfurt specialties would be Atschel, Dauth-Schneider, or Leib & Seele.

There's probably places to get better food, but make an effort to have dinner one in night in Rüdesheim. It may be touristy, but many of the restaurants feature live Schlager music. Love it or hate it, Schlager at least has to be tried.
